White Chocolate Cranberry Oatmeal Cookies
This recipe will make 24-30 cookies. Also if you don’t have fresh cranberries, you can use dried cranberries or chopped apples, that’s delicious too.
Ingredients
- 1 cup unsalted butter, softened
- 2/3 cup brown sugar
- 1/3 cup white sugar (less if you used dried cranberries)
- 2 teaspoons vanilla extract
- 2 eggs
- 1.5 cups all purpose flour
- 1 tsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp salt
- 2 to 2.5 cups old fashion oats
- 1 cup fresh cranberries and optional hand full of dried cranberries
- 1 cup chopped pecans or walnuts (both if you like)
- 1 cup white chocolate chips
Steps
- In a large mixing bowl, cream the butter, vanilla extract and sugar together until fluffy. Beat in eggs one at a time.
- Stir in the flour, salt, baking soda, salt and cinnamon.
- Add the rest of the dry ingredients. Mix well!
- Use an ice cream scooper and drop on a baking pan lined with parchment paper. Flatten the dough a little.
- Bake at 350F for 10-12 minutes or until lightly brown.
